What You'll Need:

1. 2 tablespoons of butter

2. 1 onion, chopped

3. 2 cloves of garlic, minced

4. 3 potatoes, peeled and diced

5. 4 cups of chicken or vegetable broth

6. 1 head of broccoli, chopped

7. 1 cup of milk

8. Salt and pepper to taste

How to Make It:

1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until fragrant.

2. Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and let simmer until the potatoes are tender.

3. Add the chopped broccoli to the pot and cook until tender.

4. Using an immersion blender, blend the soup until smooth. (If you don't have an immersion blender, you can use a regular blender, but be careful when blending hot liquids!)

5. Stir in the milk and season with salt and pepper to taste.

6. Serve hot and enjoy with a sprinkle of grated cheese on top, if desired.

Ingredients:

  • 1 tbsp Butter
  • 1 Small Onion, diced
  • 1 Rib celery, diced
  • 1 Clove garlic, minced
  • 16 ounces Baking Potatoes peeled
    and diced, about 2 medium
    potatoes
  • 3 Cup Chicken Broth
  • 3 Cups Broccoli florets
  • 1/2 Cup Heavy Cream
  • 1/3 Cup Sharp Cheddar Cheese,
    shredded
  • 2 tbsp Parmesan cheese, fresh
  • Salt and Pepper, to taste

Instructions:

  1. Melt butter in a saucepan over medium heat. Add onion & celery. Cook until softened, 3-4 minutes. Stir in garlic and cook
  2. just until fragrant, about 30 seconds.
  3. Add potatoes and chicken broth. Cover and simmer 8 minutes.
  4. Add broccoli and cook until softened, about 5-6 minutes.
  5. Remove 1 cup of broccoli and potatoes and slightly chop. Set aside.
  6. Using a hand blender, blend remaining soup in the pot until smooth. Add cream and simmer 1 minute. Stir in reserved broccoli, potatoes, and cheeses.
  7. Garnish with additional cheese if desired.
