Whether you're grilling for vegetarians, adding color to your plate, or just craving something fresh and fire-roasted, these Grilled Vegetable Skewers are a must. With just a drizzle of olive oil and a splash of balsamic, these skewers transform into smoky, tender bites packed with flavor—and ready in under 15 minutes.

Ingredients (for 4 skewers):

  • 4 pre-assembled vegetable skewers
    (bell pepper, red onion, mushrooms, zucchini, yellow squash)

  • 2 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ½ teaspoon dried oregano or Italian seasoning

Prep Steps:

  1. Place veggie skewers on a tray or plate.

  2. In a small bowl, whisk together olive oil, balsamic vinegar, salt, pepper, and herbs.

  3. Brush the skewers generously on all sides with the marinade.

Grill It:

  1. Preheat grill to medium heat (around 375°F).

  2. Place skewers directly on the grill.

  3. Cook for 10–12 minutes, turning every few minutes, until the vegetables are tender and slightly charred.

Serve Hot:
